I really do think that there are not many more refreshing homemade treats in summer than homemade ice cream, nice cream or sorbet. I have to say that I'm a huge fan of mixing together various ingredients and throwing them into my blender or ice cream maker.
A healthy sweet treat
The great thing about nice cream is that it's not only super cooling on a hot day, it's also healthy!
Yes, there's no added sugar and very little fat in this healthy banana and blueberry nice cream.
A great snack or dessert for kids
Because it's not filled with added sugar, colours or sweeteners, that means it's a great recipe for kids.
I love being able to give mine something that I know is homemade and healthy. They do love the sweet shop-bought ice creams and ice lollies too but at least I'm balancing those out a little!
Not just for kids
But nice cream isn't just for kids! I love it too and it's a brilliant option for anyone trying to make small changes to make their diet just a little bit more healthy.

A great way to use overripe bananas
Nice cream is also a great way of avoiding food waste. I find in summer expecially, the bananas we buy turn brown pretty quickly so making a batch of nice cream is a great way to use them up, ideally before they go too brown!
In our house, some weeks everyone wants to eat bananas but other weeks they sit there until they are brown and spotty. Even if you don't want to make nice cream at that moment, just slice the bananas and freeze them so you have a batch ready for when you do want to make it.

How do you freeze the bananas?
I slice them into rounds about 1cm thick and put them on a baking tray covered in baking paper. After they have been in the freezer for a couple of hours you can transfer them to a bag or freezer box until you need them.
What ingredients do you need for blueberry nice cream?
This recipe has just 4 ingredients!
- Bananas - Ripe ones as they add the sweetness but not brown as then they can make the nice cream look brown too!
- Blueberries - Frozen ones. You can freeze fresh ones in advance or buy them frozen.
- Almond extract - I love the flavour this adds but of course, if you're not a fan of almond you can subsitute it for vanilla or just miss it out completely.
- Milk or milk substitute - This helps loosen the mixture so it will blend together smoothly.
What equipment do you need?
You don't need an ice cream maker for this nice cream. Just a food processor or a powerful blender. I used my Froothie Evolve high speed blender which actually has a sorbet setting on it!

Can you adapt this blueberry nice cream recipe?
Feel free to adapt this recipe. You need to keep the bananas but anything else can be switched. You can even substitute the blueberries for a different berry. How about using black currants?
I added just a tiny amount of almond extract as I think it goes brilliantly with the blueberries and gives this nice cream an almost bakewell tart flavour. However, you could miss it out or even use a drop of vanilla instead.
I haven't specified what kind of milk to use as you can use any kind of milk. The milk loosens the mixture a little and helps it to blend together. Almond milk or coconut milk would work really well but if you just have cows milk then that is fine too.
How hard does it freeze?
Nice cream does go quite hard in the freezer but if you take it out of the freezer and leave it to stand for 5 minutes, it's easy to scoop.
How long can you freeze it for?
You can keep it in the freezer for up to three months although I like to eat it up within a few days!
Why isn't blueberry nice cream a beautiful purple colour?
I really wish that that this blueberry nice cream was a gorgeous purple colour. However, if you've ever bitten a blueberry in half you'll notice that they are actually green inside.
This means the nice cream doesn't quite get the same gorgeous colour you might be hoping for.
If you are lucky enough to be able to find bilberries instead, the flesh inside is reddish purple and you'll end up with a much prettier colour of nice cream.

Blender
- 3 bananas
- 140 g blueberries frozen
- ¼ teaspoon almond extract
- 60 ml milk or milk substitute It can be cow's milk, almond milk, coconut milk, soya milk etc

Slice the bananas and put them on a baking tray covered in non-stick baking paper. Freeze for at least 2 hours

Put the milk, bananas, blueberries and almond extract in a blender or food processor. Blitz until smooth. You will need to keep stopping and scraping down the sides to make sure everything gets fully blended.

Eat immediately or put in a freezer proof container and put back in the freezer until you want to eat it.
